Marcus
Flores.

The Flores Market is named for Bert Flores, a Los Angeles butcher whose shop was spared during the Watts riots because of how he treated his community. His grandson, Chef Marcus, named this kitchen in homage.

Trained through the Patina Restaurant Group — cooking at the Emmys, the Hollywood Bowl, and for former U.S. presidents — he now cooks one table at a time, by invitation.
